Ingredients
Eggplant Dredge:

2 cup * all purpose flour

¼ cup * corn starch

1 tbsp * garlic powder

1 tbsp * onion powder

2 tbsp * paprika

1 tbsp * cayenne pepper

1 tbsp * dark Chile powder

2 tsp * kosher salt
Eggplant:

1 * large eggplant, sliced

* Buttermilk, enough to cover the eggplant
sauce:

6 ounces * of the reserved hot frying oil

4 tbsp * Nashville Hot
Nashville Hot:

1 tbsp * maple sugar

1 tbsp * onion powder

1 tbsp * garlic powder

2 tbsp * paprika

1 tbsp * dark Chile powder

2 tbsp * cayenne pepper

2 tbsp * salt
