1 cup roasted chopped poblano

1 cup cooked pork chorizo

1 tbsp orange peel

1 tbsp Spiceology Black Pepper

2 tbsp Spiceology Mexican Oregano

1 yellow onion

5 cloves garlic

1 cup rice wine vinegar

½ cup rice oil or other neutral oil

3 tbsp kosher salt

2 lbs beef knife sliced

1 quart beef stock or Chix stock
Pickled red onion

2 whole red onions sliced thin

2 cups rice wine vinegar

1 tsp toasted Spiceology Cumin
