Ingredients

For one Not-Groni

  • 2 parts spirit-free gin
  • 1 part dandelion tea simple syrup
  • 1 part pomegranate juice
  • Blood orange zest for garnish
  • Large clear ice sphere

For the dandelion tea simple syrup

  • 1 tea bag dandelion tea
  • 1/2 cup boiling water
  • 2 tablespoons sugar

Instructions

  • Make the Dandelion Tea Syrup
  • Steep 1/2 cup boiling water with dandelion tea until strong and bitter. Stir in 2 tablespoons sugar while hot until fully dissolved. Let cool completely. This creates a bold, amaro-style base for your non-alcoholic cocktail.
  • Build the Pomegranate Base
  • In a mixing glass, combine: 1 part dandelion tea syrup, 1 part pomegranate juice
  • Stir to combine, add ice, and stir again until chilled. Strain into a rocks glass over a large clear ice cube or sphere.
  • Create the Layered Effect
  • Slowly pour 2 parts spirit-free gin over the back of a spoon so it floats on top. This creates a dramatic ruby-to-violet gradient and a balanced botanical finish.
  • Finish with Citrus
  • Express a strip of blood orange zest over the drink, rub it along the rim, and drop it in for a bright, aromatic lift.
