A Layered Mocktail Negroni with Dandelion and Pomegranate

There are days when you want a Negroni.
Bitter. Herbal. Bright.

And then there are days when you want the ritual without the alcohol.

This is my Not-Groni.

It’s built like a Negroni, layered like one, and finished with that same citrus oil snap. The bitterness comes from dandelion tea. The richness from pomegranate juice. The lift from a spirit-free gin inspired by Empress.

And yes, the clear ice matters.


What This Is Trying to Mimic

A classic Negroni is equal parts gin, sweet vermouth, and Campari.

In this version:

  • Spirit-free gin stands in for gin
  • Pomegranate juice replaces vermouth
  • Dandelion tea simple syrup replaces Campari’s bitter backbone

It drinks complex. Not sugary. Not flat. Structured.

Ingredients

For one Not-Groni

  • 2 parts spirit-free gin
  • 1 part dandelion tea simple syrup
  • 1 part pomegranate juice
  • Blood orange zest, for garnish
  • Large clear ice sphere

For the dandelion tea simple syrup

  • 1 tea bag dandelion tea
  • 1/2 cup boiling water
  • 2 tablespoons sugar

The Clear Ice Method

Yes, I double boil my water.

Here’s why.

1. Boil water.

2. Cool it in the fridge.

3. Boil it again.

4. Cool again.

5. Freeze in an insulated container that is open on top so it freezes from the top down.

This directional freezing pushes air bubbles downward, leaving the top crystal clear. After freezing, I cut the block and use a spherical press to shape the ice.

You do not need to do this. But if you care about presentation, it changes everything.

If you do not want to build a cooler rig, you can buy a directional freezing mold that does the same thing.

How to make not-groni

Brew the Dandelion

Pour 1/2 cup boiling water over the dandelion tea.

Let it steep fully. You want depth and bitterness.

While it is still hot, stir in 2 tablespoons sugar.

Let it dissolve completely.

Cool the syrup. You now have a bitter backbone that behaves like an amaro component.

Build the Base

In a mixing glass:

  • 1 part dandelion tea syrup
  • 1 part pomegranate juice

Stir gently to combine.

Add ice and stir again to chill.

Strain into a rocks glass over a large clear ice sphere.

Layer the Gin

Slowly pour 2 parts spirit-free gin over the back of a spoon so it floats.

This gives you that visual gradient. Deep ruby at the bottom. Violet at the top.

It looks dramatic. It tastes balanced.

Finish

Express a strip of blood orange zest over the top. Rub it along the rim.

Drop it in.

That citrus oil is what makes this feel complete.

Final Notes

This is not trying to taste exactly like a Negroni. It is trying to feel like one.

Bitter. Slightly sweet. Structured. Intentional.

And if you want to stir it together instead of keeping the layer, go for it. The flavor still works.

  • Make the Dandelion Tea Syrup
  • Steep 1/2 cup boiling water with dandelion tea until strong and bitter. Stir in 2 tablespoons sugar while hot until fully dissolved. Let cool completely. This creates a bold, amaro-style base for your non-alcoholic cocktail.
  • Build the Pomegranate Base
  • In a mixing glass, combine: 1 part dandelion tea syrup, 1 part pomegranate juice
  • Stir to combine, add ice, and stir again until chilled. Strain into a rocks glass over a large clear ice cube or sphere.
  • Create the Layered Effect
  • Slowly pour 2 parts spirit-free gin over the back of a spoon so it floats on top. This creates a dramatic ruby-to-violet gradient and a balanced botanical finish.
  • Finish with Citrus
  • Express a strip of blood orange zest over the drink, rub it along the rim, and drop it in for a bright, aromatic lift.
